Like an orchestra leader, Dennis Burrage directs all food activities in the kitchen of the renowned Manhattan Beach Country Club in Los Angeles, California. He organizes the menu, orders the food and trains his staff. A degree from chef school isn’t all that’s needed to do Dennis’ job. He uses mathematics every day. Fractions are very important. Says Dennis, "If you have a recipe that feeds ten, how do you cook it to feed two or two thousand?" Dennis also applies what he learned in four years of studying architecture to his culinary creations. "I don’t like anything flat on the plate." Geometry and symmetry come into play as he creates dishes that "not only taste good but look good too".
